Study: Watermelon stored at room-temperature is healthier

Watermelon kept at room temperature continues to produce healthy nutrients and is actually better for you than fresh-picked or cold-stored watermelon, according to new research from the US Department of Agriculture. Researchers found that watermelon stored at 70 degrees Fahrenheit gained up to 40% more lycopene and 50% to 139% more beta-carotene over a 2-week period. They also found that watermelon stored at 41 degrees Fahrenheit starts to decay and develop lesions after only a week.
